A primary objective of food science is to ensure food quality and safety. While detection techniques for known hazards are well-established, significant challenges remain in identifying unknown and potential sources of food safety risks and determining their composition and origin. These challenges encompass complex issues such as food authenticity verification, adulterant identification, and allergen tracing. Multi-omics approaches enable a transition from qualitative identification to precise quantitative analysis, from targeted detection to non-targeted screening, and from multi-component to comprehensive whole-component analysis. Consequently, multio-mics strategies offer a more accurate and efficient means to identify and validate the safety of food components, demonstrating unique advantages in addressing food adulteration, authenticity confirmation, and allergen screening. More importantly, these approaches establish a critical link to personalized diet, enabling the transition from general food safety to individualized health optimization. This review summarizes the fundamental concepts and strengths of multi-omics technologies, including genomics, transcriptomics, proteomics, and metabolomics. It further elaborates on the current applications and future prospects of multi-omics in food safety detection, with a specific focus on key areas such as food authenticity verification, adulteration detection, and allergen analysis. The aim is to establish a theoretical foundation for the application of multi-omics in the food sector and to effectively advance the development of food safety detection methodologies. |
